Ingredients for Lehsuni Palak Recipe

Spinach (palak) cleaned 1 Large bunch
Garlic finely chopped 2 tablespoons
Garlic fried for garnish
Salt to taste
Oil 1 tablespoon
Butter 2 tablespoons
Green chillies finely chopped 2
Medium onion finely chopped 1
Garam masala powder 1 teaspoon
Dried fenugreek leaves (kasuri methi) powder 1/2 teaspoon
Fresh cream 2 tablespo for drizzling

Method:

Step 1
Boil sufficient water in a deep non-stick pan, add salt and spinach leaves and blanch for a minute. Drain and refresh in ice cold water.

Step 2
Squeeze excess water and put into a blender jar. Add a little water and blend to a fine puree.

Step 3
Heat oil and butter in a non-stick pan. Add garlic and sauté till lightly browned.

Step 4
Add green chillies and onion, mix and sauté till onions are lightly browned.

Step 5
Add spinach puree and mix well. Rinse the blender jar with ½ cup water and add to the pan, mix well and bring the mixture to a boil.

Step 6
Add garam masala powder, salt and dried fenugreek leaves powder and mix well. Add cream, mix and cook for a minute.

Step 7
Drizzle some cream on top, garnish with fried garlic and serve hot.
