Ingredients for Veg Makhanwala Recipe

Tomatoes quartered 500m grams
Cauliflower small florets blanched 8-10
French beans blanched and cut into 1/2 inch pieces 4-5
Medium carrot blanched and cut into 1/2 inch pieces 1
Green peas blanched 1/4 cup
Garlic cloves 4-5
Ginger roughly chopped 1 inch
Green cardamoms 4-5
Mace 1 blade
Butter 4 tablespoons
Salt to taste
Dried fenugreek leaves (kasuri methi) powder 1 teaspoon
Honey 1 tablespoon
Garam masala powder 1 teaspoon
Fresh cream 1/4 cup + for drizzling

Method:

Step 1
Put garlic, ginger, cardamoms, mace, butter, tomatoes, salt and sufficient water in a pressure cooker and cook under pressure till well done.

Step 2
Open the lid of the cooker when the pressure reduces completely and blend to a fine puree with a hand blender.

Step 3
Strain into a non-stick pan and bring to a boil.

Step 4
Add cauliflower, French beans, carrot and green peas and mix well.

Step 5
Add dried fenugreek leaves and honey, mix well and bring to a boil. Add garam masala powder and cream, stir to mix and simmer for 2 minutes.

Step 6
Drizzle some cream and serve hot.
